Olisur Mill
Our olive mill, located in San José de Marchigüe, is a clear expression of how we understand sustainability at Olisur. From its design — awarded the Gold Medal at the Miami Biennial 2009 — it was conceived to operate in harmony with its surroundings, integrating bioclimatic technologies such as geothermal and wind systems, as well as natural light optimization.
Every architectural and operational decision aims to reduce environmental impact and ensure responsible use of energy and resources. We naturally regulate temperature, support irrigation with solar energy, and reuse 100% of the process byproducts: pits are transformed into biofuel, while pomace and pulp return to the fields as fertilizer. In this way, the mill not only ensures efficiency and quality, but also reflects a genuine, everyday commitment to responsible production.
