Olisur was founded in 2004 by Alfonso Swett, with a clear conviction: to produce extra virgin olive oil of the highest quality, in harmony with the land, people, and environment.
From the Colchagua Valley, we were pioneers in implementing super-intensive farming systems, mechanized harvesting, and rapid extraction processes, ensuring freshness, low acidity, and consistent quality standards.
With more than 1,600 hectares planted in San José de Marchigüe and commercial operations since 2007, Olisur has become one of Chile’s leading producers and exporters of bottled olive oil, with a presence in 9 countries.







Thanks to a super-intensive farming system, our fields make the most of each season’s natural conditions. The climate, well-defined seasons, and soil allow for optimal olive tree development.
When the fruit reaches its ideal point, it is mechanically harvested and transported to the mill in under two hours. This preserves its freshness and allows us to produce 100% extra virgin oils with low acidity and internationally recognized premium quality.
Located in the Colchagua Valley, the San José de Marchigüe Estate is the productive heart of Olisur. Here, we cultivate our olive trees under a super-intensive farming system, allowing us to mechanically harvest the fruit at its optimal stage of ripeness.
The close proximity between the fields and our extraction and bottling facilities — located within the same estate — allows us to process the olives just hours after harvest. This precise and timely handling reduces oxidation and ensures oils with very low acidity, reflecting a quality standard typical of the finest extra virgin olive oils.
Located in Portugal’s Évora region, the Herdade de las Mesas and Flor da Rosas estates are part of Olisur’s international agricultural development. Together, they encompass 1,800 hectares of production, primarily planted with Arbequina and Arbosana varieties, dedicated to producing premium extra virgin olive oil.
Strategically located in the Northern Hemisphere, this project allows harvesting between November and December, complementing Southern Hemisphere production. As a result, Olisur ensures 100% fresh olive oil year-round, maintaining consistency and quality in every harvest.
