When the olives are at their peak of their ripeness, they are mechanically harvested and sent to the oil mill within 2 hours for extraction to guarantee their flavor and freshness, being classified worldwide as a premium product, making us specialists of 100% Extra Virgin oil production, with a very low acidity of only 0.2%.
